Basic taboos
There is in no case anything to eat and drink with inflammation of the pancreas. These include:

- Chocolate, fat cream;
- By-products;
- Mutton;
- Salo;
- Figure;
- Duck;
- All fatty fish;
- GOOSE;
- Smoked meat, lard;
- Banana;
- Fried, spicy;
- Hard egg;
- Semi-finished products;
- Grape seed;
- Cooking fats;
- Dates;
- Rich broths;
- Preserves, jams;
- Any canned food;
- Sundae (and ice cream in general);
- Omelette;
- Pastry shop.
Acute pancreatitis
Let's talk about nutrition for acute pancreatitis first. Immediately after an exacerbation and for the next two days, you should not eat at all. We are only allowed five or six glasses of mineral water. Regeneration of the organ is due to the fact that gastric and pancreatic juice is not secreted.
On the third day, you can eat, but unsalted liquid foods with a high carbohydrate content. Wheat crackers, vegetable and grain soups, with weak broth are allowed. After that, you can enter steamed omelets, turkey fillets, chicken, lean fish.
On the fifth day, the calorie content increases to 700-800 kcal, of which 200 g are carbohydrates and 15 g are protein. The fats are introduced between the sixth and the ninth day.
The menu during this period should be as follows:
- We have breakfast with rice porridge without milk, tea with sugar, orange (apple);
- Snack on mashed carrots (potato), boiled low-fat fish or chicken (50g), rosehip broth;
- 150 g of broth (vegetable), 30 g of boiled fish (veal), mashed potatoes, mashed potatoes for lunch;
- Second snack. 50 g of cottage cheese (0-2%) with sugar, sweet tea;
- Instead of supper - a spoonful of honey and boiled water (250 ml).
Recovery after exacerbation
The nutrition of pancreatic pancreatitis after an exacerbation is more varied. If you try, you can really find fun and delicious recipes from what's allowed. We eat 5-6 times a day. It is better to use steam when cooking, puree everything with a blender, cook.
You can eat:
- Meat with a minimum of fat (chop and cook). Cooking meatballs, steamed cutlets, meat soufflés. Lean beef, rabbit, turkey fillet, chicken, veal allowed;
- Fish (you can use pollock, cod, pike, pike perch, plaice and other lean varieties). Boiling or steaming, steamed chops are allowed;
- Porridge based on oats, buckwheat, semolina, rice. Barley with corn is rare. We cook in water (or milk and water in equal proportions);
- Pasta. Do not add any sauce, only olive oil, butter. Do not fry with garlic, oil, onions;
- Dairy products. Whole milk is not recommended. Fermented baked milk, kefir, cottage cheese up to 9%, mild cheeses are allowed;
- Egg. Just like an omelet or porridge. Use infrequently;
- Vegetables. Cooked, boiled, mashed, vegetarian soups, casseroles. Pay attention to carrots, potatoes, melons, beets, green peas, cauliflower. You cannot eat most of the cruciferous family, mushrooms, horseradish, raw onions, spinach, garlic, beans (legumes in general), sweet peppers, sorrel;
- We also cook fruit, cook compotes, jelly, mash potatoes. Apricots, watermelons, melons are ideal;
- Dry white bread with pancreatitis, drink tea with salty and not rich cookies;
- Homemade jelly, mousse. Less commonly, marshmallows;
- Still mineral water, compote, sweet tea, rosehip broth, jelly.
Chronic form
The diet for chronic pancreatic pancreatitis differs from the menu for acute inflammation. The chronic "version" develops with an acute inflammatory process of the gland, with cirrhosis, hepatitis, gallstone disease, ulcers of the intestine and stomach, atherosclerosis. The menu should take into account the background of the course of pancreatitis.
The main method of treatment for you is not drugs, but a diet for chronic pancreatitis, an approximate menu of which is based on several principles:
- We eat six times a day and little by little, products with a laxative effect are needed.
- Keep track of your daily protein intake. He needs 130 g per day, vegetable proteins need 30% of this figure. Beef veal, rabbit, turkey, pork with minimal fat, chicken and lean fish are recommended. With constant pain, the meat is cooked minced or steamed. You should not abandon low-fat fish and meat dishes: they will prevent fatty degeneration of the liver, which is characteristic of chronic inflammatory processes in the pancreas;
- Fat transformation is counteracted by homemade fresh cottage cheese (non-acidic and with a minimum percentage of fat). Other dairy products are also needed. Whole milk is added to starters, cereals, jelly, or drunk half a glass per day (if well tolerated). The fat content of milk should not exceed 2. 5%. If you're feeling good, let's say cheese (a little) with minimal fat and mild varieties. Do not forget about kefir and fermented baked milk (homemade is the best option). It is not necessary to eat store-bought yogurts with flavorings and starch: there is little benefit here;
- Eggs. Integers are not recommended. Eggs are acceptable as a complement to other dishes, in the form of steamed omelet (protein), whipped protein in other dishes;
- Vegetable proteins. We look for them in rice, pasta, yesterday's bread, oatmeal, semolina, breadcrumbs, buckwheat. Legumes are prohibited;
- Fats. The patient's diet should contain 70. 80% should be of animal origin. They will be eaten properly with other foods and dishes. Put butter in ready-made porridge or pasta before eating. Vegetable oils are allowed if you tolerate them well. Other types of fats (culinary, beef, margarine, pork) are prohibited;
- Carbohydrates. They need up to 350g per day. These are honey, sugar, syrups and jams. You have to eat semolina, oatmeal, buckwheat, pearl barley, rice, pasta. From vegetables, carrots and beets, potatoes, melons (zucchini, pumpkins, squash) are acceptable. They are best steamed or boiled, steaming pudding is also suitable, it would be ideal to eat vegetables in the form of mashed potatoes. Don't eat them raw. Bread is allowed white, black, gray;
- Fruit. Mostly, apples of non-acidic varieties are needed. Cook, wipe, boil the compote. For the latter, dried fruits are suitable;
- Sauces. Of all varieties with pancreatitis, béchamel made from flour and milk is allowed. We do not pass the flour, add a minimum of salt;
- First meal. We never refuse them. You are entitled to soups of cereals, vegetables, lean poultry, meat, fruits, dairy products;
- Beverages. In addition to the aforementioned compote, it is useful to drink fruit juices, milk tea, mineral water;
- Supplements, special products. Add protein powder and vitamins to the diet;
Do not eat too much, the volume of food (plus all the liquid you drink) should not exceed two and a half kg. No matter how strict a pancreatic pancreatitis diet may seem, a rough menu may not be boring and varied.
Here's how you can organize your meals for chronic illness:
- 7 a. m. - 7: 30 a. m. Breakfast. Oatmeal pudding, boiled beef, sweet tea;
- 9 am-9. 30am. Breakfast. Baked apple, steamed omelet, rosehip tea;
- 13. 00. We have lunch with vegetable soup, beef soufflé, pasta. For the jelly and the sweet berry compote;
- 4. 30 p. m. Afternoon tea. Tea with cottage cheese;
- 8: 00 p. m. We have dinner with tea and a fish soufflé.
Nutrition in remission
Here's a slightly different approach to diet planning. You can diversify the recipes. You need a lot of protein, more fat than otherwise. Carbohydrates are also complex.
The main features of the scheme are:
- We use more protein than our physiological norm;
- Fats and complex carbohydrates are consumed within our standard, carbohydrates are obtained from grains;
- Less than the norm are used jams, cakes, pastries, honey, sugar and salt.
During remission, it is worth giving up substances that irritate the mucous membranes of the gastrointestinal tract. It's not just alcohol - avoid vinegar and spices.
In case of remission, the diet can be varied. Now it is allowed not only to boil or steam food. You can simmer and cook vegetables, fish and meat. Refuse to rub: it is still allowed to eat whole foods. Food should be hot, but not more than 60 degrees. We eat 4 to 6 times per shot, with intervals of up to three hours between meals.
In numbers, it looks like this:
- Proteins need 120 g, of which 70 g are of vegetable origin;
- The fats of the medical menu contain 90 g, of which a third are vegetable;
- We consume 350 g of carbohydrates per day, of which 40 g are easily digestible;
- Calorie content - up to 2600 kcal.
Several good recipes
Don't be afraid of bland foods and tasteless vegetables. With the inflammation of the pancreas, it is also possible to exercise cooking skills. Here are some inspirations and sweets for a sample pancreatic pancreatitis diet menu.
- Cottage cheese casserole in the microwave. Beat 2% cottage cheese with banana with a mixer, add chopped date. We bake for about five minutes in silicone molds. Use with plain yogurt (unsweetened);
- Baked apple with curd meringue. Wash the fruits, get rid of the middle, cutting them into two parts. Separately beat proteins and powdered sugar until thickened. Whipping, put 2% cottage cheese in the mixture. We stuff the fruits, bake in an ordinary oven (at 160 degrees) for a third of an hour;
- Biscuits. Mix the flour (6 tablespoons) with half a tablespoon of olive oil, the same amount of baking powder, lukewarm water and a third of a teaspoon of salt, as well as some Italian herbs. to taste.
